Detection about active substances in black mustard seed and the effect of aqueous and alcoholic extracts on inhibition of some microorganisms

Abstract

The study was conducted on black mustard Brassica nigra seeds.The Percentage rate of seed component were2% moisture, 23.30% Protein ,35.88% fat ,5.52% ash , 5.00% fiber and 28.30% carbohydrates. The preliminary chemical analysis of active compounds showed that seeds contain glycosides, alkaloids, resin, flavonoids , phenol and saponines. Each aqueous and alcohols extracts were tested for antimicrobial activity towards (7) different strains of microorganisms included (3) bacterial which were Escherishia coli , Pseudomonas aeruginosa and Staphlyococcus aureus as well as 4 species of molds which were Alternaria alternata , Trichoderma harzianum , Penecillium italicum , Aspergillius niger . The inhibitory activity of extracts were varying and based on method of extraction and microorganism. The water extracts had shown clear inhibition towards bacterial strain E. coli and P. Aeruginosa . The alcoholic extract had low inhibition activity against the bacterial strains compared with water extracts, The water extracts at (50,75,100 )% were not showed any inhibition effect toward A. niger The alcoholic extracts was more effect on P. italicum , percentage of inhibition was 75.5% than another molds which were A . alternata , T. harzianum , A. niger that their percentage inhibition were (62.0 , 38.8, 20.22) % respectively.
