Abstract
A total of 20 isolates of yeast were isolated from local food sources.
Biochemical and morphological tests were used to identify the isolate which has the
highest production of biomass. It was found to belong to Candida utilis and termed as
Candida utilis SA3.The effect of beta glucan as antimicrobial agent had been studied
and the result showed that beta glucan did not have the ability to inhibit growth of
pathogenic and starter bacteria in vitro, while significantly enhanced survival of mice
when challenged systemically with Staphylococcus aureus and Escherichia coli till
100 % and with Pseudomonas aeruginosa till 90 %.
